The Ecole Nouvelle restaurant offers
A healthy, balanced menu featuring
- Plenty of vegetables and raw vegetables
- A portion of meat, fish, eggs, legumes or cheese
- Flour in limited quantities
- Good quality fats, used sparingly
- No more than one indulgent meal per week (fried foods, cold meats, pastries, etc.)
- A dessert, most often fruit or dairy

‘Homemade’ label
The Ecole Nouvelle has officially been awarded the ‘Homemade’ label. This label certifies that our dishes are cooked by our chefs on site using fresh Swiss produce. Hours of cutting, simmering, expertise and passion in the kitchen result in flavourful dishes and desserts. This is recognition of our commitment to artisanal, high-quality cuisine that respects ingredients and seasons.
